ZuZucchini Linguini w/a Mushroom Gravy, Baked Potatoes & Brussels

Ingredients:


2 cups brussel sprouts, halved

1 tsp thyme

2 cups potatoes sliced into ¼” thick slices

1 zuchinni, spiralized

1 cup carrots, julienned

1 cup celery, diced

1 cup onion, diced

1 Tbsp garlic, minced

2 Tbsp olive oil for sauteing veggies + 2 Tbsp for drizzling over potatoes and brussels

1 Tbsp balsamic vinegar

2 Tbsp coconut aminos

1 Tbsp dijon mustard

3 Tbsp nutritional yeast

1 Tbsp lemon juice

fresh ground salt and pepper to taste

(optional topping Vegan Parmesan Cheese)


Ingredients Vegan Herbed Mushroom Gravy:

2 cups water

¼ cup almond milk

2 Tbsp cornstarch

2 cloves garlic

2 Tbsp olive oil

2 cups mushrooms, sliced

1 tsp soy sauce or tamari

1 tsp coconut aminos

1 tsp balsamic vinegar

1 tsp oregano

1 tsp herbs de provence

fresh ground salt and pepper
