V. Potato Salad

10/13/18 - Moon in Sag - Sun in Libra
Potato Salad Ingredients:
2 cups boiled potatoes, cut into small ½-¼” cubes
1 cup lentils, cooked (click here for a cooked lentil recipe)
1 cup (2 - 3 stalks) celery, chopped small ½-¼” cubes
cut stalk vertically down the center once, then chop horizontally
2 medium dill pickles, diced into small ½-¼” cubes
1 - 2 stalks green onion, finely diced
½ cup of fresh cilantro, de-stemmed
1 cup (2-3 small vine ripened) tomatoes, diced
1 can garbanzos (½ can mashed up for salad + ½ can for dressing)
1 tsp dill

Dressing Ingredients:
2 Tbsp (~½ lemon, juiced) lemon juice
2 cloves garlic
½ can garbanzos
1 c vegan mayo
1 ½ tsp Nature's Seasonings
2 Tbsp coconut aminos
1 ½ Tbsp nutritional yeast
½ tsp parsley
Fresh ground salt and pepper to taste
