Pumpkin Almond Butter Cacao Truffles

Ingredients:

  • ½ cup plant based butter

  • ½ cup almond butter

  • 1 cup cacao powder

  • 15 oz can of pumpkin puree

  • 7-8 dates (¾ cup)

  • ¼ cup maple syrup

  • 2 tsp vanilla extract

  • 1 tsp cinnamon

  • ¼ tsp nutmeg

  • ¼ tsp cloves

  • 1 tsp salt

Method:

  1. In a medium saucepan, over a very low heat, melt together

  • 1/2 cup vegan butter

  • 1/2 cup almond butter - stir constantly, do not let simmer

2. Add ½ cup cacao, whisk until well incorporated.

3. Add remaining ½ cup cacao powder, whisk until completely incorporated

4. Fold in 7.5 oz (½ can) organic pumpkin into the chocolate. The texture will resemble a mousse.

5. Fold in remaining 7.5 oz (½ can) pumpkin mix until pumpkin is completely folded in.

6. In a food processor mix

  • ~½ cup - 1 cup of the almond butter-cacao-pumpkin mixture

  • ¾ cup dates (7-8)

- process until dates become a paste.

7. Add

  • ¼ cup maple syrup

  • 2 tsp vanilla extract

  • ½ tsp salt

  • ½ tsp cinnamon

  • ⅛ tsp nutmeg

  • ⅛ tsp cloves

8. Add the remaining almond butter-cacao-pumpkin mixture to the food processor

  • mix until well blended together.

9. Transfer mixture to candy molds or a muffin tin lined with plastic wrap to simplify getting the treats out.

OR

Make little “Hershey Kisses” shapes. Using a fine tip cake bag or a homemade cake bag (see instructions below) squeeze the mixture into Hershey kiss shapes onto a piece of parchment paper. Put in the freezer, in an airtight container to avoid freezer burn, for >30 min. 10. Put in the freezer, in an airtight container to avoid freezer burn, for >30 min. Enjoy w/in 7-9 days, if you can make them last that long!

How to make a homemade cake bag:

  1. Put mixture into a ziplock bag. Squeezing the mixture into a corner as you go and pressing out any air bubbles that you can

  2. Once all of the air is out. Seal the ziplock bag.

  3. Using your fingers, press away the mixture from the corner

  4. Cut the corner off, and dispose in recycling bin.

NOTE***how much you cut will dictate the boldness of your line

  1. For a fine line - cut a small piece off

  2. For a bold line - cut a larger piece off
