Epic Vegan Verde Smothered Burrito

Ingredients Burrito Filling:
1 can black beans (optional re-fry them at home)
1 cup cooked brown rice
½ cup corn (fresh, canned or frozen)
5 potatoes, cooked - pan fried
1 cup kale, losely packed
1 cup zucchini cubed
1 carrot, shredded
½ cup roasted red peppers
1 cup mushrooms, sliced
"cheezy vegan taco meat" - see recipe below

Ingredients Raw Vegan Cheezy “Taco Meat”:
1 cup walnuts
1 Tbsp nutritional yeast
1 Tbsp organic coconut aminos
1 tsp turmeric
1/2 tsp smoked paprika
1/2 tsp oregano
1/2 tsp garlic powder

Ingredients Vegan Verde Smother Sauce:
2 c plain plant based yogurt
2-3 cloves garlic
juice of 1/2 lemon
2-3 green onion (cut off bulb)
2 large handfuls cilantro
1 Tbsp apple cider vinegar
1 tsp salt and fresh ground pepper to taste
1 tsp oregano
1/2 tsp smoked paprika
1/4 tsp chili powder
1/2 tsp cumin
1/8 tsp cayenne pepper
