Creamy Potato & Leek Soup

w/balsamic glazed kale & mushrooms

Ingredients:

• 4 cups potatoes

• 3 leeks

• 2 cloves garlic + 2 cloves garlic, minced

• (Add 1 cup celery & 1 cup carrots next time)

• 1 cup mushrooms, sliced

• 2 cups kale, loosely packed

• 1 Tbsp olive oil

• 1 tsp oregano

• ½ tsp parsley

• ¼ tsp thyme

• Fresh ground salt and pepper to taste

• 1 cup veggie broth or water (or enuf liquid to fill pot w/veggies at least bottom 2”)

• ¼ tsp vegan Worcestershire sauce

• ½ tsp Balsamic vinegar

• 2-3 drops liquid smoke

• ½ tsp soy sauce

• 1 tsp dijon mustard
